Our commitmentAt Stokley Farm, garlic is one of our foundational crops. We cultivate both hardneck and softneck heirloom varieties selected for flavor complexity, storage performance, and adaptability to Pacific Northwest growing conditions. Every bulb begins with carefully chosen seed stock and is grown using zero synthetic pesticides and soil-first practices.
Our goal is simple: grow garlic that tastes like where it was planted.
Featured Varieties
Large, easy-to-peel cloves with a classic bold garlic flavor. Excellent cold tolerance and dependable bulb size. A favorite for roasting and raw preparations alike.
Music (Porcelain Hardneck)
Rich, spicy, and complex. Known for strong flavor and solid storage potential. Ideal for cooks who want depth and punch.
Metechi (Georgian Heirloom)
Beautiful violet striping with a balanced, slightly sweet heat. Reliable performer in Western Washington soils and excellent for culinary versatility.
Persian Star (Purple Strip)
Technically a leek relative, but loved for its massive size and mild flavor. Perfect for grilling, slicing thick, or caramelizing whole.
Elephant Garlic
Additional specialty varieties may rotate seasonally depending on field performance and seed stock availability.
THE GARLIC GROWING CYCLE

Cloves are planted 2–3 inches deep and mulched heavily to protect from winter freeze.

Bulbs establish roots beneath the soil while cold exposure supports proper bulb development.

Strong green growth emerges. Scapes are harvested in late spring to redirect energy into bulb formation.

Watering is tapered off two weeks before harvest to encourage curing readiness.

Harvest. Bulbs are pulled at peak maturity and moved to shaded airflow areas for curing.

Fully cured bulbs are trimmed, cleaned, and prepared for sale or seed stock.
